El objetivo fue caracterizar el perfil hematológico y bioquímico sanguíneo de Gallus gallus domesticus en relación la línea genética y al sistema de crianza. Para ello se utilizaron 20 pollos de la línea Cobb 500 de 42 días de edad y 2 kg de peso criados en confinamiento y 20 gallinas criollas criados en forma extensiva de 8-10 meses de edad y 2 kg de peso. De ambos grupos de aves se obtuvieron muestras de sangre entera y suero sanguíneo. El hematocrito se determinó mediante microhematocrito en un Hettich EBA 20. Los análisis de Hb, ALT, AST, proteína total y albumina se realizaron utilizando un espectrofotómetro DIALAB DTN 405 a 530 nm y reactivos WIENER LAB. Los perfiles de Hto, y albunina en pollos de la línea cobb-500 y los de gallinas de crianza extensiva fueron similares (p>0.05), sin embargo, los perfiles de Hb, proteína total, AST, ALT, colesterol total y colesterol HDL fueron diferentes (p<0.01), mostrando que la proteína total fue mayor en las aves criollas que en los pollos de la línea cobb-500 y los perfiles de Hb, AST, ALT, colesterol total y colesterol HDL fueron mayores en los pollos cobb-500 que en las gallinas de crianza extensiva. Se concluiye que la línea genética y el sistema de crianza en confinamiento influye en forma marcada en incrementar el nivel de perfiles de Hb, AST, ALT, colesterol total y colesterol HDL.
